
Digital evolution in the slaughterhouse of Gebr. Gocksch in Herford: An ERP system from Winweb ensures seamless data flow from delivery to trade.

At Gebr. Gocksch KG in Herford around 3,200 pigs are slaughtered and butchered weekly. “In order to meet the requirements of our industrial customers and to digitalize our processes, we have our previous Slaughter module replaced by Winweb's ERP system", says junior manager Gordon Gocksch. Upon delivery, the slaughter animals are entered into the Qualiproof database per farmer and the salmonella status of the farm is checked. Qualiproof then reports back the number of samples to be taken and states the required Quality mark such as QS certification or participation in the Animal Welfare Initiative.
In the slaughter hall, each animal is examined by a veterinarian. If there are complaints, these are assigned directly to the slaughter number on a touch terminal. If the veterinarian wants to examine a pig more closely, it is marked in the system as “provisionally confiscated” and diverted. During the later examination, complaints can then be recorded in detail on a tablet that is connected to winweb-food.

Big Brother Qualiproof
Next, the classifier uses the Fat-O-Meter to determine the trade class of the animal and enters it together with the slaughter weight on a touch-terminal. Based on the number of samples specified by Qualiproof, the classifier is shown in winweb-food the samples already taken and those still pending per farmer. For this purpose, the sample tubes provided with a barcode are scanned and linked to the associated slaughter number. Each data record is digitally archived and printed out at the same time for the state office.

If the ERP system recognizes based on another fattening operation number that the announced animals were not delivered, the pre-notification is canceled and carried out again. The recorded findings are then automatically reported to Qualiproof for each animal including the sample accompanying data. Once a week, the number of slaughtered animals with animal welfare labeling including slaughter data is also transmitted from the system to the Initiative Tierwohl. The slaughter notification to the state office also takes place automatically every week as a file export. The invoices are created based on different parameters and can be printed or sent directly by e-mail to suppliers. In addition to the individual animal and summary evaluations, the findings of the veterinarians are particularly important for the calculation. This means that a current evaluation of the individual fattening operations is always available. Because the slaughter facility and merchandise management are connected through the ERP system, all data from the delivery of the animals to retail are recorded for later traceability. “Despite steadily increasing requirements in the area of traceability and automated data exchange between suppliers, customers and various control bodies, with the help of winweb-food it is possible for us to react flexibly to customer requests and to continue satisfying them with our products”, summarizes Gordon Gocksch.
