One system for everything
The entire Production including Breakdown also runs via the new ERP system: This includes the management of cutting lists, the determination of cutting yield through actual weighing, the calculation of material price and production costs, actual recipe weighing across all production stages including QA inspection plans, as well as the calculation of nutritional values, allergens and ingredients in compliance with QUID regulations. In winweb-food, packaging is also planned order-related and with direct reference to the respective packaging lines. Batch traceability and finished packaging control round off the range. All production records can be evaluated quickly and flexibly. “This concerns specific questions such as, for example: How much waste occurs during packaging when a new film roll is inserted ”, explains Pascal Eckerscham. At present, Dirk Oswald and his team are still examining reality very concretely directly in production. The result is incorporated into the production cost calculation in order to be able to calculate anew and even more accurately with it.
For many major customers, a proprietary WinwebEDIConverter the entry of customer orders, electronic delivery and forwarding order messages as well as invoice transmission implemented – which is now significantly more efficient and less prone to errors as a result. Picking is largely carried out by scanner: “This also reduces errors and ensures faster picking”, says Eckerscham. After successful loading control, the forwarding orders are transmitted in winweb-food to the forwarding agent via the EDIIFTMIN interface and the required NVE labels are printed directly from the ERP system. Via the management information system, for example, the entire sales volume can be evaluated at the click of a mouse. The calculation of sales prices taking into account all conditions and downstream costs such as annual rebates also takes place in the system.

Paperless orders
In addition, in the 21 company-ownedBranches around Radeberg and from Dresden to Zittau all store systems are connected. Relevant master data such as item information, prices or promotions are maintained at headquarters and transferred to the store systems of the branches. Using time- and item-controlled order templates, each branch then orders its goods from headquarters paperlessly. All orders are transferred automatically and control production planning and picking. After cash register closing, the receipt and TSE data from each branch are transferred automatically, prepared for the evaluation of sales volume, revenue and shrinkage and preposted to financial accounting.
In the document management system, all documents are ultimately collected: all incoming invoices that are posted via winweb-food, cost invoices, supplier certificates and article passports, proof or delivery notes. Everything is automatically assigned to the appropriate process via barcode recognition.
"There is no need to program any special custom solutions, with winweb-food I have everything from a single source", says Alber.
Calculation under control
“Now we have costing completely under control”, says Controller Dirk Oswald happily. “We can see immediately where we have leeway, where there is pressure, at which points do production losses arise?” Felix Alber also says that all the effort was worth it: “We now have the certainty that we are calculating reality. We can analyze different dimensions, create a pivot table with just one click of the mouse, which makes analyzing the ongoing processes much easier for us. And finally we have one hundred percen- t consistency in merchandise management.” There is now only a single system that can be updated: “No custom extras need to be programmed, with winweb-food I get everything from a single source”, says Alber.
Nevertheless, of course, not everything has always been sunshine and roses, says the boss. It has happened that a product enhancement for mapping individual processes had to be adjusted again. “But the whole thing is also highly complex and a permanent process that never ends,” Alber knows.
And Pascal Eckerscham adds: “Of course, there were already occasional minor delays on both sides.” However, that is to be expected in a project of this scale and is taken into account in advance during project planning. “Ultimately, there were no major problems with the changeover”, both sides agree.
Consumption analysis is on the agenda
Among other things, a consumption analysis of the branches and the calculation of the ingredients and nutritional values via the recipes are planned next. One of his heartfelt concerns can also soon be realized: “So far, a physical inventory has been carried out every month”, explains Alber. As a result, he only has the financial figures on his desk on the 10th of the following month.
“Once inventory is mapped one hundred percent in winweb-food and the bridge to financial accounting is in place at the end of the month, all that remains is to press the button to immediately have the profit and loss of the month that has just ended on the screen.” One of its most important key figures – kilos per man-hour – Alber can already retrieve continuously today: “That helps us constantly optimize processes in order to become faster and more effective.”

Radeberger Fleisch- und Wurstwaren Korch GmbH, founded in 1991 and originating from a butcher's business in Silesia, processes and sells 140 tons of ham and sausage products per week with around 400 employees. Annual revenue amounts to around 50 million euros. The products are offered nationwide under the brand "Original Radeberger" in self-service shelves, but are also sold at the fresh food counters in regional retail and in the company's own branch network. "Original Radeberger" has a high brand recognition of up to 90 percent in the eastern federal states.
