Spices are mixed daily for 30 different products with IT support

For traceability, calculation and also with the Production of traditional sausage products – for example when seasoning – the Torney Land butcher's shop in Pripsleben uses the ERP system winweb-food. And for the company's 25 branches, the powerful software serves as an ordering, information and evaluation system.

In the small cold room, it smells like an oriental bazaar: pepper, marjoram, cardamom and cloves fill the air. Only the master butcher no longer consciously notices the spicy mixture in all its variety, as he mixes the spices for the in-house sausage products here every day. “Our sausage is not made with ready-made spice blends, but rather all ingredients according to old, traditional Recipes assembled, weighed and added to the sausage meat," says Frank Wegner, Managing Partner of Torney Landfleischerei Pripsleben. And not only are the Pomeranian sausages seasoned by hand and cooked on site, the salads of the Landfleischerei are also made by hand and seasoned individually.

It is easy to imagine that in a company that produces 72 different products, this can no longer be done without IT support. “In 2007, we introduced winweb-food, which is also used to weigh and monitor the seasoning mixes for each product”, says Managing Director Frank Wegner. If the weight of the seasoning mix does not match the product to be seasoned, the system issues an error message, explains the 51-year-old.

All processes are supported

Of course the seasoning is not the only thing supported by the software: In the Meat cutting around 100 pig and three to four beef halves are roughly and finely cut up, portioned, labeled via the ERP system and documented here three times a week. winweb-food also offers preliminary and post-calculation of the cutting items in order to be able to determine the contribution margins per item. At the same time, complete actual recording of the cutting output is possible in order to present the cutting results with a target-actual comparison of the yield. This means that the gross profit can be calculated at any time.
In the subsequent picking process, the orders of the individual branches and major customers are displayed on the touchscreen: Processing line with item, ordered and processed quantity as well as Batch number. Product by product, the order is processed until the desired quantity for the corresponding customer is reached. If, at the end, the scale measures a different value than the weight calculated by the ERP system, the system reports an error. This is intended to ensure that exactly the ordered quantity is delivered to the 25 Branches delivered, from Rostock in the northwest to Pasewalk near the Polish border, with 15 stores to be found in the pre-checkout area of Netto, Lidl and Kaufland. The three discounters in the region are also supplied directly with sausage products and salads.

Branches under control

Particularly important to Frank Wegner is the Branch evaluation, which operates on two tracks at Torney: On the one hand, each branch orders itself what is missing and what needs to be restocked. On the other hand, the employees at the headquarters in Altentreptow can also access the inventory of each branch at any time and track sales. If, for example, a type of sausage is soon approaching its best-before date, the product can be transferred from one branch to another or specifically promoted as a special offer.
The revenues of the individual Branches Wegner checks daily and compares data such as number and sales per customer with the same day of the previous year. Promotional checks can also be carried out with the branch evaluation. Last but not least, the system measures sales per salesperson and then calculates the bonus for the employee

Calculation at the touch of a button

Furthermore, Frank Wegner uses the Management Information System from winweb-food: In the purchasing management system, for example, the average purchase prices are compared with the cutting prices, in the sales management system average prices can be displayed in comparison to the previous year and in the Storage management system it is possible to track exactly which products are available in which quantities and when more must be purchased. “I also work particularly often with the sales channel calculation”, says Wegner. Here the system calculates the transport costs for all customers that are not its own branches and relates them to the respective conditions: “This allows me to quickly and easily display sales and profit per customer”, explains Wegner, who despite all his satisfaction still has one or two suggestions for improvement for Winweb from time to time: “I wanted to be able to understand exactly how, for example, the bockwurst performed across all sales channels.” Where were how many sausages sold, what did the sales look like, what profit did his branches make and, by contrast, the discounters like Netto?

Brief profile: Torney Country Butcher

Torney Landfleischerei Pripsleben GmbH belongs to the Torney group of companies, as do Torney Milch und Fleisch e.G. and Torney Mutterkuh GmbH with a total of around 150 employees. Together, the motto “from the stable to the pan” is to be implemented and the path from the production of feed and the keeping of cattle and pigs through the processing of raw materials in production to the sale of meat and sausage products is to be covered.
In 1990, the first butcher's shop opened in Pripsleben in the Mecklenburg Lake District, where self-produced meat and sausage products were sold. Little by little, new branches were opened mainly in the checkout areas of large discounters such as Netto and Kaufland.
In 1993, Torney Landfleischerei Pripsleben GmbH was founded, which now includes 25 branches in Mecklenburg-Western Pomerania. It produces sausage products and, since 2010, also salads such as egg, beef, or poultry salad. In the branches, changing snacks and daily specials are offered weekly.
